Serve these creamed mushrooms with chives over mashed potatoes or biscuits for a quick and easy breakfast, lunch or dinner.

A great vegetarian recipe, Creamed Mushrooms, can be served over mashed potatoes or biscuits (see our recipe below) for a quick and hearty vegetarian meai. If you're not a vegetarian, you can smother baked or sauteed chicken breasts or broiled steaks with the mushrooms for a comforting meal.

If you're looking for real vegetarian comfort food, try spooning the mushrooms into a medium sized casserole dish, or individual casserole dishes and top with a store bought puff pastry. Bake in a hot 375 degree oven until the crust is golden brown.

Creamed Mushrooms

Ingredients:

  • 1 Pint of button mushrooms,
  • 1 large Portobello mushroom
  • 4 Tablespoons of butter
  • 3 Tablespoons of flour
  • 1 cup of cream
  • 1 cup of milk
  • 1 Tablespoon of chives, thinly sliced
  • 1 pinch of sea salt
  • 1 teaspoon of cracked black pepper

Directions:

  1. In a large skillet melt the butter over medium low heat.
  2. With a damp cloth clean the mushrooms in order to remove any dirt. Slice the mushrooms thinly and add to the melted butter.
  3. Saute for 5 minutes or until the mushrooms start to become soft and fragrant. Whisk in the flour and cook for 1 minute before pouring in the milk. Whisk until the sauce thickens and season with salt, pepper and chives before adding the cream. Turn the heat down to low and whisk until the sauce thickens once more.
  4. Ladle the creamed mushrooms over mashed potatoes or biscuits.

Baking Powder Biscuits

Ingredients:

  • 1/2 cup(s) unsalted butter
  • 2 1/2 cup(s) all-purpose flour (sifted twice before measuring)
  • 1 tablespoon(s) baking powder
  • 1 teaspoon(s) salt
  • 1 1/8 cup(s) cold buttermilk
  • 1 tablespoon(s) melted butter

Directions:

  1. Heat oven to 475 degrees F. Cut butter into small cubes and freeze 15 minutes. Stir dry ingredients together in a large bowl.
  2. Cut in butter using either a pastry blender, two knives, or your fingers until mixture resembles a coarse meal.
  3. Stir in buttermilk using a fork just until dough forms. Knead 3 to 4 turns on a lightly floured surface and pat into a 7- by 10-inch rectangle. Cut out biscuits using a 3-inch cutter (gathering scraps until all dough is used).
  4. Place 2 inches apart on a baking pan. Brush tops with melted butter.
  5. Bake on top shelf of oven 16 to 18 minutes. Transfer to a wire rack. Serve warm or at room temperature.
